If you go to Japan, don’t forget about the countryside it’s amazing and well worth booking into a ryokan with onsen baths to take after Long walks. Takayama is a sleepy village in Gifu accessible by train. Life is a lot slower there and the people are Super friendly. It reminded me a lot of some parts of the north of England. Hida Beef is incredible. Burgers and beef on sticks are served at the side of the street and if you are into Gyoza, you have to go to Hida Takayama Gyoza Sohonzan. The owner is Super welcoming and after you eat his 3 types of Gyoza, he asks you to draw something in exchange for a gift. I realised that as he can’t speak English, this is his way of communicating with foreigners who pass through. Such an awesome guy.
